As the world knows I love brinjal (most of US like right?), this is also one of my favorite poriyal made with brinjal! But since Vj does not like brinjal (like most of the guys), I almost don’t make this, may be this is the fourth time or so ,I am making after marriage 🙁
If mom makes this, I will first have this poriyal with hot steamed rice, ghee mixed with her hands & love. Then have it as side dish for sambar sadam, mor sadam. So with all the courses, the brinjal poriyal is thulped.
Until we move out form our mom, we don't know how much she cares about us constantly and how she showers her love with such personal caring. Yesterday I made specially for me and my blog 🙂 So here’s an easy brinjal poriyal recipe, could be made within 15 minutes.

Usually, for most of the poriyals and curry, I make, I use onion extensively. I saute chopped or sliced onion first, followed by the vegetable. But in this recipe, shallots (small onion) is ground along with coconut coarsely along with cumin seeds, which gives an unique flavor that is so good.
If you have not tried this combo before, do try this, you will love it, promise. Also a lazy part of me feels less job to chop onion and fry it, hehehe. I wish I could get my hands on home grown or naatu kathrikai for best taste, texture and flavor.

In this updated video, I have skipped tamarind. No hard and fast rules for the recipe, Just the coconut onion paste does the magic.

💭 Top tip
Depending on brinjal variety, the cooking time varies. Use less water if it is quick cooking brinjal. I liked purple + white striped brinjal best for this recipe. Some varieties gets mashed and over cooked. So make sure to use less water, reduce cooking time in such cases.
Do not grind the masala paste smooth. It should be coarse in texture. Smooth masala gets stuck to the pan easily, also the flavor will be different.
As the coconut gets cooked and roasted, it wont be sticky, so carefully cook it until then. Add oil as and when needed.

Ingredients
- 8 Brinjals
- 2 teaspoon Sambar powder heaped
- 1 teaspoon Tamarind extract
- ¼ teaspoon Turmeric
- Salt
- 1 tablespoon Oil
To grind
- ¼ cup Coconut
- ½ teaspoon Cumin seeds
- 3 Shallots small onion
- ¼ cup Water
To Temper
- 1 tablespoon Oil
- ½ teaspoon Mustard
- 1 teaspoon Urad dal
- 1 sprig Curry leaves
Instructions
Cut brinjals length wise and cut them in desired size. Keep immersed in water till use.
Grind the coconut with water and lastly add shallot and jeera and grind them coarsely.
Heat a heavy bottomed pan/nonstick pan with oil and temper with the items given under the To Temper table.
Add the cut brinjals, turmeric, salt and mix well.
Add ground coconut mixture, tamarind extract/ water, sambar powder and mix.
Cook covered for 2-5 minutes in medium flame. Cooking time varies with brinjal variety.
After that, cook without cover and roast in medium flame for 10 mins in medium flame.
Drizzle oil in between if needed. The masala should dry up, gets non sticky. Brinjal turns glossy and cooked soft.
Once the masala is golden roasted, switch off stove and transfer to serving dish.

🔪Brinjal poriyal Method:

- But you can grind everything together, but make sure to grind coarsely.
- Heat a heavy bottomed pan/nonstick pan with oil and temper with the items given under the To Temper table.
- Add the cut brinjals, turmeric, salt and mix well.
- Add ground coconut mixture, tamarind extract/ water.
- Tip in sambar powder.
- Mix well.
- Cook covered for 2-5 minutes in medium flame. Cooking time varies with brinjal variety.
- After that, cook without cover and roast in medium flame for 10 mins (or until done without mashing it) in medium flame.
- Drizzle oil in between if needed. The masala should dry up, gets non sticky.
- Brinjal turns glossy and cooked soft.
- Once the masala is golden roasted, switch off stove and transfer to serving dish.
Transfer to the serving bowl and that’s it ,ready to enjoy as accompaniment for rice.

Do you use fresh coconut? I would like to use desiccated coconut, is that possible? Should I soak them in water before? Sorry if that's a stupid question!

Not at all, we get all sorts of doubts while cooking 🙂 You can sure use desiccated coconut though it will be slightly dry and different in flavor. You need not soak, just use little less than mentioned and proceed with the recipe.
